The Great Family Challenge: Creative S'more & Popcorn Recipes

Thanks so much to everyone who participated in last month's Great Family Challenge!  We had such an awesome time putting together our pumpkin decorating entries and were thrilled to get such wonderful feedback.  

This month's challenge was a little more outside the box but I'm so pumped to walk you through it.  I wanted to play around with the idea of re-inventing a classic fall snack...adding to or replacing ingredients, toying with savory/sweet and so on.  After some brainstorming we landed on s'mores and popcorn and decided to make this month a creative s'more and popcorn recipe challenge. 

To make things interesting, I cast a really wide net in regards to what we'd consider a "s'more"...the only criteria being 1) you must be able to make them over a bonfire and 2) there must be an element of sandwiching.  As you can imagine, my family took this and really ran with it.  There were no limits whatsoever in regards to the popcorn, except that it should theoretically pair well with the s'more.  

I've gotta say, I was extremely impressed with what everyone came up with!  I tried a little bit of each entry and there wasn't a single dud in the bunch.  I know it's tricky since you can't actually taste the contenders, but I'd recommend voting based on creativity of flavor combinations, plated presentation and the overall deliciousness factor.  Better yet- just vote for what you wish you could try most.

Birthday S'More Sundae
Traditional s'more topped with chocolate ice-cream and rainbow sprinkles

Peanut Butter & Jelly S'more
Whipped cream cheese, fire roasted marshmallow and fresh strawberries sandwiched between two grilled Belgian waffles.  Topped with confectionary sugar and drizzled with strawberry jam.

Mediterranean S'more
Homemade baklava spread, date honey, roasted marshmallow, and white chocolate sandwiched between white chocolate drizzled graham crackers topped with crushed pistachios.

Popcorn tossed with lemon oil, crispy pancetta, Mediterranean spiced roasted chickpeas and cilantro.

The Savory Spanish S'more
Puff pastry with five cheese, mushroom and onion filling.

Salted caramel spice popcorn seasoned with chili powder, orange zest and tossed with pecans, walnuts, and cranberries in a salt rimmed chocolate bowl.  Drizzled with salted caramel.

10 Movies to Watch Before Halloween

We're ten short days away from halloween and I am in the zone!  For me, "the zone" means obsessing over a halloween costume (I think I played the Hermione and Ron card too soon into my marriage and now I'm having trouble coming up with a couples costume that tops it #FirstWorldProblems).  For others- most notably my husband- "the zone" means conjuring up as many scary experiences as possible.  Davey and I have a lot of things in common but this is not one of them.  However!  Since I'm expanding the horizons of the blog a bit I wanted to share a killer list (pun intended) that he, Stevie and Jordan came up with (more on Stevie and Jordan later).  It was stressed to me- and I will in turn stress it to you- that this is not a top 10 list.  These aren't the 10 best scary movies out there but they are 10 very good movies you can watch on Netflix right this moment.  Since a great movie you can watch right now is better than a theoretically better movie you can't, I stand by their strategy. If you're in the market for a scary movie (or better yet, a scary movie marathon), read on!

The Great Family Challenge: Pumpkin Decorating

When God made my family he gave us a double portion of competitiveness.  We're rooting for each other in the big things, but in the little things ("Who made the best flower arrangement for your baby shower, Nadine?  You have to pick!" -an actual quote from last weekend)...we like to win.  

Needless to say planning an official monthly family competition was- if anything- overdue.  So welcome to month numero uno of The Great Family Challenge!  Here's a few things you'll want to note re: this challenge and the challenges to come...

1) Each team is made up of two randomly selected family members (chosen via drawing names from a hat).  
2) YOU get to vote on the winner!  The power is all in your hands...fun, right?  Voting is allowed once per day for the one week duration of the contest.  Voting is anonymous so even if you happen to know our family, you shouldn't know who's entry is whose. (That being said, if someone sent you here specifically to vote for them, they broke the rules!)   

3) Each month will have a different seasonally appropriate theme.  The overall goal of this series is to showcase fun, creative and original ideas.  Social media is a wonderful thing but sometimes the same concepts just get regurgitated over and over (and over).  We're hoping to come up with a few things you haven't already seen a million times.  

This month's theme was pumpkin decorating...some are hilarious, some are lovely, some are are more...refined than others (you'll see what I mean as you keep scrolling), but they're all quite creative and that was the goal.

3 Ideas

Welcome to our brand new series, 3 Ideas!  I'm so psyched about it, I can't even tell you.  So here's how this'll work: every week you'll find a different charge here...make this week productive, make this week meaningful, make this week (fill in the blank).  Alongside, I'll present 3 ideas to help turn that thought into an action.  I was debating on where to place this series in the week and after weighing the pros and cons of both beginning and end I decided to go with smack dab in the middle.  By the time Wednesday rolls around there's a good amount of week left to conquer and not always a lot of motivation...consider 3 ideas your hump day treat.  


1. Bundle up and go for a walk.  Winter is about to set in big time which means we're all living on borrowed time when it comes to outdoor activities (minus skiing, which I'm vehemently opposed to).  Enjoy the beautiful leaves, take a few deep breaths and soak in everything fresh air has to offer.

2. Light a scented candle and read a book...sounds simple enough but if you actually take time to do it...we're talking soul medicine.  Here's some combinations I'd recommend:

All Set: Harvest Hues

One of our seasonal series is making an appearance today which is always a good time, believe you me.  This particular All Set was orchestrated entirely by my angel mother because 1) she has such a wealth of great ideas, and 2) I think she's concerned about my general well being in regards to how many hours we've been putting in at the shop lately (it's crunch time, folks).  I always know I can count on her to come up with something amazing, especially when I need her help.  As per usual, she sure did come through.  I just love her eye for color and how she can make even the subdued colors of fall look alive.  This is the current set up in her breakfast nook...so sharp looking, right?

For reasons I'm not entirely sure of, this outfit makes me think of Princess Kate (which obviously means I'm obsessed with it).  The sweater and coat are my favorite pieces...I'd wear the living daylights out of them this fall!  The plaid scarf is a fun touch, too.  It's just all reeks of autumn to me and I love that.

A Fall Playlist For Your Listening Pleasure

While I'd love to say that I listen to the coolest music in the world, it's a charade I don't have the energy for.  I listen to the music I like which can pretty much be broken down into two simple groups: songs I've adored for most of my life and music I secretly Shazam-ed while riding in my brother's car (speaking of my brother and music, make sure you tune in to Jersey Shore tonight- I know, I can't believe I said that either- to hear his band Dinner and a Suit).  I do, however, make a mean seasonal playlist.  In fact, the Holiday Playlist I posted last year may or may not be one of my favorite Design Muse moments.  For whatever reason, Autumn calls for mellow music in my book so here's what I've had on repeat:

The Foodie Files

Let me just tell you, I've been eating all kinds of feelings lately...mostly excitement and gratitude with the occasional twinge of anxiety because of that thing I want to tell you about but can't (but will soon).  If there's one thing I've learned about eating your feelings, it's that you might as well make them delicious enough to merit the calories, hence last week's Nutella Stuffed, Brown Butter and Sea Salt, Dark Chocolate Chip Cookies.  This week I tackled a similarly delicious treat: a Bourbon Pumpkin Cheesecake (with a graham cracker and pecan crust).  I adapted the recipe from Smitten Kitchen and will almost certainly make it again in the next month or so.  It's got all the perfect fall flavors mixed up in a not-totally-expected way, plus it's easy and scrumptious.  Truth be told, it might even be Thanksgiving worthy (a high honor if I don't say so myself)!  Hope you love it!

Ingredients:
For Crust-
3/4 cup graham cracker crumbs
1/2 cup pecans, finely chopped
1/4 cup packed light brown sugar
1/4 cup granulated sugar
5 TBS unsalted butter, melted

For Filling-
1 1/2 cups canned pumpkin
3 large eggs
1/2 cup packed light brown sugar
2 TBS heavy cream
1 tsp vanilla
1 generous TBS bourbon
1/2 cup granulated sugar
1 TBS cornstarch
1 1/2 tsp cinnamon
1/2 tsp freshly grated nutmeg
1/2 tsp salt
3 (8 ounce) packages cream cheese, at room temperature

Create a flat bottom (so it's easier to remove the cake) by inverting a 9 inch spring-form pan.  Lock and grease.  Put diced pecans in a sandwich bag and crush with the back of a spoon to make them smaller still.


Stir together crumbs, pecan bits, sugars, and butter in a bowl until combined well.  Press crumb mixture evenly onto bottom and halfway up the side of pan, then cover and chill the crust for about an hour.


Put your oven rack in the middle position and preheat to 350°F.  Whisk together pumpkin, eggs, brown sugar, cream, vanilla, and liquor in a large bowl until combined.  


In an electric mixing bowl, stir together granulated sugar, cornstarch, cinnamon, nutmeg, and salt.  Add cream cheese and beat with an electric mixer at high speed until creamy and smooth, about 3 minutes. 


Reduce speed to medium, then add pumpkin mixture and beat until smooth.  Pour filling into crust, smoothing top, then put spring-form pan in a shallow baking pan (in case spring-form leaks).  Bake until center is just set, about 60 minutes. Turn your oven off and let the residual heat cook the cake for an additional 5 minutes. 


Cool cheesecake in the pan on the rack for about an hour, then chill for an additional hour or two.  Remove the sides of the pan and serve!  


Side note: I added one or two TBS of bourbon to a container of extra creamy Cool Whip and served it alongside the cheesecake.  It was amazing...two thumbs up.
